Different Shoyu Chicken
5 pc chicken breast
1 tbsp fresh basil, chiffonade
1 tsp rosemary, chopped
1 tsp Italian parsley, chopped
2 tbsp dark mushroom flavored soy sauce
6 tbsp organic honey
In a bowl, combine all ingredients and mix well. Marinade for 15 minutes. In a large frying pan, pour contents into pan (make sure it doesn’t over flow…if pan is not large enough, use a pot). Cook on medium high heat, turn once half way through cooking (about 4 minutes per side, depending on thickness of chicken) until chicken juices run clear.
Fa’s Veggie Casserole
2 stalks broccoli, chopped to bite-size
2 medium carrots, peeled, and chopped to equal size
1/2 a large yellow onion, coarsely diced
3 ribs of celery, chopped
9 strips of turkey bacon, chopped to bite size
(optional) 1 pack extra firm tofu, diced into 1” cubes
2 1/2 cups tomato sauce
1/2 cup tomato paste
3-4 cups shredded mozzarella cheese
10 basil leaves, chiffonade
freshly ground pepper, to taste
2 tbsp olive oil
2 slices fresh ginger, crushed and scored on both sides
1 large zucchini, diced
3 cloves garlic, crushed and minced finely
2 Roma tomatoes, diced
1 tsp sweet dried basil, to garnish
Preheat the oven to 375 degrees fahrenheit. In a large pan, heat olive oil over medium-high heat. Add salt, pepper, ginger, and garlic. Cook for 1-3 minutes, add onions and cool till semi translucent. Add carrots and celery, cook till semi soft. Set aside. Return ginger to pan, cook broccoli, zucchini, bacon, and tofu till slightly charred. Add tomatoes, tomato sauce, and tomato paste stirring occasionally. In a large baking pan (I used 9x13” 3 qt) mix cooked veggies, tomato mixture, 2 cups of cheese, and basil together. Pat ingredients flat and top remaining cheese over casserole. Bake for 30 minutes. Remove from heat, let cool for 5-10 minutes, garnish with sweet dried basil, serve.
Honey Balsamic vinegar dressing
1/4 cup extra virgin olive oil
1 tbsp balsamic vinegar
1-2 tbsp organic honey
(optional) 1 tbsp cilantro, chopped
Combine ingredients in a cup and whisk together with fork. Drizzle over salad or keep in cup and use accordingly. Great with slivered almonds.
